Directions:

Preheat the oven to 425 degrees. Peel the potatoes, cut them in thin pieces, and across slices roughly 3/4 down into the potato, yet not right through to the base.

Put them on a heating dish and brush the two potatoes with olive oil and residue with salt and pepper to taste. Heat them for about thirty minutes, until they are delicate.

Next, remove them from the oven, and increase the temperature to 450 degrees.
